Mozzarella and tomato salad
2 large pink tomatoes
1 handful of pitted black olives
1 garlic clove
½ bunch of parsley
A few fresh basil leaves
1 ball of mozzarella
Rinse the tomatoes, peel them and cut into rings. Overlap them in a large plate. Sprinkle with chopped parsley and basil, mixed with the sliced garlic clove.
Drizzle with olive oil and garnish with mozzarella and olive rings.
Serve the tomato and mozzarella salad with a jug of olive oil and coarse salt.
