Green herb salad
Ingredients:
1 bunch of parsley
3 sprigs of dill
1-2 sprigs of thyme
3-4 basil leaves
2 sprigs of chives
1 hard-boiled egg
100 g mozzarella
½ cucumber
30 g walnuts (chopped)
1 teaspoon white balsamic vinegar
3 tablespoons olive oil
½ teaspoon mustard
½ clove of garlic
Himalayan salt
Preparation:
Rinse and chop finely all the greens. Cut the cucumber into rings (peeled or not).
In a salad bowl, make a base of mixed greens. Spread over the cucumber rings, diced cheese and egg half-moons. Sprinkle with walnuts.
For the vinaigrette, emulsify all the ingredients in a bowl. Serve in a sauce boat for personal dosing.
