Classic tabbouleh


2 bunches of parsley
2-3 sprigs of fresh mint
½ cup couscous, medium grain
2 tomatoes
A few twigs of chives
80 ml olive oil
½ lemon juice
½ teaspoon of dry mint
½ teaspoon ground cinnamon
1 handful of raisins
Salt to taste


Pour the couscous into a bowl and add the same volume of boiling water. Cover and let stew. Then crumble the couscous, stirring with a fork.

Mince all the fresh greens, deseed, skin and cube the tomatoes. Mix together into the couscous. Sweeten with the raisins and season with cinnamon, dried mint, olive oil and lemon juice. Salt to taste.

Refrigerate the tabbouleh for 1 hour to let all the flavors infuse.
