Carrot salad with maple sauce

Ingredients for 2 people:

4-5 carrots

2 sweet apples

30 g pine nuts or hazelnuts

30 g soft yellow cheese (St Nectaire, Port Salut or other cheese)

Grapeseed oil and salt to taste

1 tablespoon fresh dill


5 tablespoons yogurt

10 ml of lemon juice or orange juice

1 tablespoon of maple syrup


Wash and peel the carrots and apples. Grate the carrots and cut the apple into cubes. Mix in a bowl, add salt and grapeseed oil.

Sprinkle the salad with pine nuts or coarsely chopped walnuts. Bake the seeds in advance for 3 min in a microwave oven at 700 watts, on a plate, stopping the oven every 40 sec to mix. At the smell, we can judge they are ready. The cooking time is determined per 100 grams of nuts.

In a small jar mix the ingredients for the sauce. Stir until smooth. Sprinkle the salad with the sauce. Serve the carrot salad immediately, decorated with some greenery.
