Based on the recipe and preparation of my Philippe
Ingredients for 6-8 people:
200 g dark chocolate
1 sachet of vanilla sugar or a few drops of vanilla extract
Separate the whites from the yolks. Melt the chocolate in a bain marie and away from heat, stir in the egg yolks and vanilla.
Beat the egg whites into stiff peeks with a pinch of salt, then add them gently to the chocolate.
Pour the chocolate mousse in 6 or 8 ceramic bowls and cover each with a plastic wrap. Refrigerate for at least 2 hours.
Serve the chocolate mousse straight from the fridge.
