Vegan pumpkin mousse


300-400 g raw pumpkin (peeled)
4 teaspoon ground almonds
40 g walnut
6 dried dates
1 teaspoon honey
1 tablespoon coconut butter
Black pepper
Dried thyme


Cut the pumpkin into cubes. Transfer into a container suitable for microwave (with lid). Cook for 7 minutes at 800 W in the microwave oven (lidded). Let rest, then mash with the coconut butter and a some black pepper.

Put the puree in a jar adding also the walnuts, chopped dates, honey, thyme and almonds. Mix into a smooth paste.

Serve the mousse cold with a good crusty bread and freshly baked walnuts. This is a perfect breakfast or snack.
